In a small bowl, mix together one A-Sha Mandarin Noodle Sauce Packet with 2 tablespoons of lemon juice, 1 1/2 tablespoons of soy sauce, and 1 teaspoon of chili oil.
Bring 4 cups of water to a boil and then add in the A-Sha Mandarin Noodles and cook for 3-4 minutes stirring occasionally. Drain and set aside.
Heat up the pan on medium-high heat with one tablespoon of oil. Add the recommended serving size of 18 shrimp, cleaned and deveined, to the pan and cook until they turn pink.
After cooking the shrimp, remove the shrimp from the pan and add another tablespoon of oil. Add 6 mushrooms, cut into quarters, 1 chopped red bell pepper, 1 chopped medium zucchini, 1 peeled and shredded carrot to the pan, and stir fry until vegetables are almost tender. Then add 3 cloves of minced garlic, 1 teaspoon of minced ginger, 2 tablespoons of chopped green onions and continue cooking until vegetables are fully cooked.
Once vegetables are fully cooked, add the drained A-Sha Mandarin noodles, sauce, and shrimp back to the pan with vegetables and toss contents of the pan until well blended and coated in sauce.
Transfer contents of the pan into a large bowl and finish with chopped fresh cilantro (coriander) on top. Enjoy!
